Happy October! I LOVE OCTOBER!
October is special because it is my birthday month!
I was born on my dad’s birthday, and the weather is near perfect in West Texas this time of year.
I love pumpkin everything… What is your favorite fall food?
Do you “leave your light on” for trick or treaters?
We enjoy seeing all the kids’ costumes come through, my dad always told us if they are too big to trick or treat, just reach in their sack and thump the bottom. 🙂
My youngest son loves to dress up… still.
He usually does a costume change at least once through the night while trick or treating in our neighborhood.
You really have to watch him too, because he likes to eat his candy as he goes. Last year about this time, he was home sick from school and struggling to get his work done.
I let him take a blanket out on our front lawn to do his make-up work because it was so pretty outside.
He laid on his stomach and looked across the street at our neighbor Marcy’s house, who goes all out for trick or treaters… He looked over to me between math problems and said,
“Man… just looking at Marcy’s house makes me want a Hershey bar.”

EASY CAKE MIX COOKIES
1 box of cake mix
2 large eggs
1/2 c vegetable oil
1 c of baking chips or mini candies
1 c raisins (if desired)
1/2 c chopped nuts (if desired)
Have fun with mix and add in combinations!
- Triple chocolate fudge-mini chocolate chips & pecans
- Strawberry – mini chocolate chips
- Lemon – white chocolate chips & raisins
- Red velvet – white chocolate chips
- Preheat oven to 350 degrees.
- Line cookie sheet with parchment paper (for easy clean up)
- Mix eggs, oil and cake mix (do not follow box instructions) until smooth.
- Fold in baking chips, fruits and nuts.
- Use a mini ice cream scoop or large spoon to make dough into balls. Put on lined cookie sheet 2 inches apart.
- Bake for 10-12 minutes.
